The choice of organic farming was obvious for this passionate veterinarian practicing osteopathy, passionate about alternative and complementary medicine, creator in 1999 of the Biological and Craft Fair of Libourne, who embarked on the adventure in 2004 with 2, 53 ha of vines planted on two slopes facing north-south for the Merlots (85%) and east-west for the Cabernets-Sauvignon (15%), then 84 ares in 2015, to reach 3.37 ha. The plots are of different ages: 25, 35 and 55 years. Manual and friendly harvesting, sorting on the vine and on the table at the entrance to the cellar, vinification without the addition of yeast, aging in vats and barrels. Biodynamic Demeter certification since 2016. - Cultivation: the rows of vines, one out of two grassy, ​​hedges, allow auxiliary fauna and flora. Pruning is mostly double guyot with two astes with 8 buds per vine. The rows are worked under the feet. The intercores are eliminated. The stripping is done on the side of the rising sun. The vine is accompanied by biodynamic preparations, herbal teas, and a minimum of copper and sulfur. - vinification: fermentation is natural without the addition of yeast. A hot post-fermentation maceration is generally used. Malolactic fermentation occurs naturally, sometimes late in vats or barrels. The aging is carried out partly in vats and partly in barrels. Bottling is carried out without filtration (or almost). “My primary objective, says Jean-François Moniot, is to produce a wine that I like and that I can enjoy sharing with friends. My line of conduct is learning and respecting a terroir and a place, to produce a sincere and authentic wine.”
Beautiful bordeaux supérieur red 2017, subtle and supple, persistent on the palate with characteristic smoky nuances, all in the mouth, with balanced tannins (€15). The 2016 is quite fleshy as it should be, with a rich nose dominated by ripe black berries, all in harmony, a wine with silky and tasty tannins, with excellent evolution.
The 2015, silver medal Concours International des Vins Biologiques Paris 2018, is a colorful wine, with persistent aromas of ripe red berries and a touch of cinnamon, with supple and very balanced tannins (€15).
The 2014, with a lot of structure, is all in the mouth, well balanced, with a nose of violet, candied cherry and humus, very elegant structure, very good aging as evidenced by this 2012, classic of this vintage that the 'we tend to forget, colorful and very fleshy, with a melted and fragrant mouthfeel in which notes of very ripe small red fruits with pits intertwine, which tastes very well today, for example, with beef with peppers (12 €).
And finally this bordeaux supérieur red Divin 2016, with a nose dominated by prunes, very fragrant, very balanced, with round but very present tannins, ample and very persistent on the palate (€15).
