Michel Chauvet tells us that “our farm, now run by Sylvie Lancelot, was created by her parents in 1960, themselves third and fourth generation winemakers. Our 100% Chardonnay vineyard, labeled Sustainable Viticulture, extends mainly on the Grands Crus terroirs of the Côte des Blancs. Our traditional cellar dug in the chalk mound leaning against the house shelter for 2, 4, 5 or 7 years the different vintages developed by us. But also the oak barrels where rest the reserve wines used for our blends. Our press being located at the top of the hill the must are transported by gravity in the fermentation tanks. Our son Édouard decided to take over the farm. After the necessary time of transmission, he will represent the 6th generation!”
All this explains our regular favorites for their cuvées, including this tasty Champagne Vintage 2016, "I always keep the 7-year-old vintages in the cellar", 100% Chardonnay, 100% grand cru Cramant, very beautiful shade, nose dominated by yellow fruits and fresh flowers, intense palate (40 €).
Beautiful cuvée Dualissime blanc de blancs grand cru, 100% Chardonnay, harvest 2017 for 85% and 15% reserve wines, beautiful color, with notes of fresh fruit and spices, fine foam, which combines aromatic richness and persistence, and we suggest it with roasted sweetbreads or lobster stew (34 €).
Superb blanc de blancs cuvée de Réserve R.R, pure Chardonnay, harvest 2020 for 60% and 40% reserve wine, it is a good roundness and with a very aromatic bouquet with connotations of white flowers and lemongrass, well dosed, it will accompany dishes such as monkfish, Saint-Pierre, lobster or why not parmesan (23 €).
The Brut des Chevaliers grand cru blanc de blancs, 100% Chardonnay Grands Crus, harvested 2018 for 62% and 38% reserve wines, is all in the mouth, with persistent fruity connotations with nuances of blackberry, mixing roundness and charm, dense and finely bouqueté (28 €).
